One of the problems encountered by professionals in the fishing industry is the quality of the display and presentation of the fish.

One must avoid that the fishe’s flesh does not get burned by the ice or that the filet be contaminated by the water that has flowed. This is an unfavorable bacteriological environment and does not insure an attractive presentation of the produce to be sold.

Pulverized water at a high pressure gives very fine droplets (2 to 10 microns) in the air and helps maintain humid air above the fish without wetting them.

The produce does not dry up as much because the pulverized water will evaporate first. Thus, the fish will keep its freshness, color, the iridescent reflection of its skin and shine of its muscles.
